GAJAR KAE HALWA (CARROT HALWA)

Ingredients

3 pints milk
1 lb. butter
1 lb. almonds (peeled and sliced)
1 jar (2 cups) double cream
2 pieces warag (silverpaper, optional)
1 lb. carrots
8 cardamoms
1 lb. sugar
2 tsp. rosewater
2 oz. pistachio nuts

Method

1. Boil milk and add finely grated carrots.
2. Simmer slowly for about 3 to 4 hours, until milk is absorbed.
3. Add butter and continue stirring, add the cardamoms, almonds and sugar.
4. Add cream and rosewater stirring well until batter separates slightly.
5. Remove from heat and pour into serving dish.
6. Cover with silverpaper (warag) if available.
7. Sprinkle with pistachio nuts before serving.
